For over four decades, Pauline's has been a staple in local cuisine, having been recognized as one of Burlington’s highest-rated restaurants. A hidden gem tucked away off Shelburne Rd., the restaurant emphasizes using fresh, local, and in-season ingredients in its upscale-yet-unpretentious dining. First transformed into a cafe, the first floor dining area featured rich cherry paneling, custom oak tables, original wood framing, and an intimate cherry bar. An addition was built in 1996, now called the "porch." 

The upstairs dining rooms feature warm hues of gold, green, sienna, and mauve, with an eclectic artwork collection. Candle-lit tables, hand-picked selections of jazz, and an extensive wine cellar contribute to the romantic and relaxed environment. Two separate rooms are upstairs, known as the "Gold" and "Plum" Rooms, which are popular for business gatherings and private functions.

Meet the Chef

Executive Chef and Owner, David Hoene brings his expertise and enthusiasm for cooking to all aspects of the Pauline's dining experience. Chef David purchased Pauline's from previous Owner/Chef Robert Fuller in 2007.  With David's influence, menus are infused with fresh ideas from simple Braises to Elegant Wine Course Dinners. Chef Hoene embraces the philosophy of using  local and regional products, continuing Robert's commitment to serving quality meals in a comfortable enviroment.

We kindly ask that any mobility needs are communicated to us ahead of time, so that our staff may have proper notice about seating arrangements. Any requests given to us at the time of seating may not be honored. Please be kind to our hosts and understand that several people request certain tables, and we honor those on a first come first serve basis. Thank you!
